
From Food Truck in Idaho Falls to a Community Staple in Pocatello
In 2017, Lupita Ayala started Taqueria Sol Azteca food truck in Idaho Falls. A family business, they worked seven days a week
without taking a day off. Lupita also held a second job as a DJ
at a local radio station before she started her day at the food truck. The food truck was a challenge: cold in the winter, hot in
the summer, and too small to accommodate her children. In 2019, Lupita heard from a realtor friend about a house and
restaurant location in Pocatello. She sold her Idaho Falls home
and moved her seven children (ages 6 – 22) to Pocatello. Lupita came to the SBDC for help through a referral from
Zions Bank. Claudia worked with her oldest daughter, Brenda
(who is now an accounting student at ISU) and taught her
bookkeeping on Quickbooks. This saved the business money
on accounting and bookkeeping.
Everything at Taqueria Sol Azteca is made fresh daily. With
access to the ISU crowd and local workers, Sol Azteca is
always busy at lunchtime.
